Fire And Ice Shrimp Recipe
This is a great appetizer to bring to a large event or to have for backyard bbq. The combo of cold shrim and spicy flavors is refreshing for summer get-togethers. From Family Circle.

Ingredients
  • 1 tsp red pepper flakes
  • 1/2c rice-wine vinegar
  • 11/2lbs raw shrimp,unpeeled(30 to 35 ct.,frozen is okay)
  • 1 Tbs ginger root,chopped
  • 3 cloves garlic,peeled
  • 1 Tbs sugar
  • 1 tsp salt
  • 1 small onion,thinly sliced
  • 2 scallions(green and white portions),thinly sliced.

Directions
  1. In small bowl,soak red pepper flakes in vinegar for 30 mins.
  2. Meanwhile,bring 3 qts. water to a boil. Add shrimp;simmer for 3 to 4 mins(longer if shrimp was still frozen),until pink. don't overcook.
  3. Drain shrimp in colander and rinse with cold water to cool. Peel. If you want more pieces,cut each shrimp in half lengthwise.
  4. Place vinegar-pepper liquid,ginger,garlic,sugar and salt in blender. Blend till smooth. Put in small saucepan and bring to a simmer. Place shrimp,onions and scallions in a glass bowl. Add hot sauce and stir to combine well. Cover;chill overnight. Serve with toothpicks.
  5. I did this dish with pre-cooked shrimp. Very good.
