Fire and Ice Shrimp

- 1 tsp red pepper flakes shopping list
- 1/2c rice-wine vinegar shopping list
- 11/2lbs raw shrimp,unpeeled(30 to 35 ct.,frozen is okay) shopping list
- 1 Tbs ginger root,chopped shopping list
- 3 cloves garlic,peeled shopping list
- 1 Tbs sugar shopping list
- 1 tsp salt shopping list
- 1 small onion,thinly sliced shopping list
- 2 scallions(green and white portions),thinly sliced. shopping list
How to make it
- In small bowl,soak red pepper flakes in vinegar for 30 mins.
- Meanwhile,bring 3 qts. water to a boil. Add shrimp;simmer for 3 to 4 mins(longer if shrimp was still frozen),until pink. don't overcook.
- Drain shrimp in colander and rinse with cold water to cool. Peel. If you want more pieces,cut each shrimp in half lengthwise.
- Place vinegar-pepper liquid,ginger,garlic,sugar and salt in blender. Blend till smooth. Put in small saucepan and bring to a simmer. Place shrimp,onions and scallions in a glass bowl. Add hot sauce and stir to combine well. Cover;chill overnight. Serve with toothpicks.
- I did this dish with pre-cooked shrimp. Very good.

Just like pickled shrimp but with an asian flair. Perfect. Really good hanging off a bloody mary cocktail, too. Hint! Hint!
