an easy way to make homemade sausage for a crowd

Ingredients
  • 3 pounds lean ground pork
  • 2 teaspoons salt
  • 2 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried garlic powder
  • 1/2 teaspoon cracked black pepper

Directions
  1. In a large bowl, combine all ingredients. Mix well to combine. Store in refrigerator in covered bowl for at least 8 hours for flavors to combine. Makes 24 patties.
  2. TO MAKE CHORIZO:
  3. replace the herbs in above recipe with a mixture of:
  4. 1/3 cup chili powder
  5. 1/2 cup water
  6. 1/2 cup cider vinegar
  7. 1 tablesppon minced fresh garlic
  8. 1 tablespoon dried oregano
  9. 1 teaspoon cumin powder
  10. and refrigerate overnight
