How to make it

  • In a large skillet, saute the chopped onion in the canola oil until translucent. Set to the side.
  • Brown the hamburger in the same pan, crumbling it as it cooks. Drain fat.
  • Add the tomatoes, creamed corn, tomato sauce, water, chili powder, and the cooked onion to the browned hamburger. Simmer on low for 30 min.
  • Now, very slowly add the 1 cup of yellow cornmeal into this mixture by sprinkling over the top as you stir. If you go too fast it will clump.
  • Pour into a greased casserole dish and dot the top with the pitted ripe black olives.
  • Bake at 350 until hot and bubbly on top; about 30 to 45 min.

    Your sweet tooth shows in your recipes but this is okay. I'd opt for frozen whole kernel corn for taste and texture but the rest id pretty Mexican.

    Oh yeah, this does sound excellent. Can't beat the corn flavor- to me, that's what makes Mexican type food taste right. Saved, printed...will definitely be making it, thanks so much!
