How to make it

  • Slice sausage into bite size pieces, however you like
  • Add a little olive oil to frying pan over medium heat
  • Add chopped onions, peppers, and sausage to pan
  • Cook, stirring occasionally till sausage is browned a bit and peppers, onion are al dente
  • Add Ranchera sauce (you can use a milder salsa if you're "heat" sensitive)
  • Simmer till good and hot.
  • (mushrooms and/or black olives would be good in this too)
  • Put over rice or in tortillas with cheese, sour cream and cilantro.
