Ingredients
  • Amylu's Tequila/lime chicken sausage (Costco) I used 5
  • Chopped onion (about 1/2 cup or more)
  • Chopped red bell pepper (I used one half)
  • 1 can Herdez Ranchera salsa (very hot)
  • 1 cup (or more) shredded mexican blend cheese
  • Sour cream (optional)
  • Cilantro (optional)

Directions
  1. Slice sausage into bite size pieces, however you like
  2. Add a little olive oil to frying pan over medium heat
  3. Add chopped onions, peppers, and sausage to pan
  4. Cook, stirring occasionally till sausage is browned a bit and peppers, onion are al dente
  5. Add Ranchera sauce (you can use a milder salsa if you're "heat" sensitive)
  6. Simmer till good and hot.
  7. (mushrooms and/or black olives would be good in this too)
  8. Put over rice or in tortillas with cheese, sour cream and cilantro.
