Ingredients

Amylu's Tequila/lime chicken sausage (Costco) I used 5

Chopped onion (about 1/2 cup or more)

Chopped red bell pepper (I used one half)

1 can Herdez Ranchera salsa (very hot)

1 cup (or more) shredded mexican blend cheese

Sour cream (optional)

Cilantro (optional)

Directions

Slice sausage into bite size pieces, however you like

Add a little olive oil to frying pan over medium heat

Add chopped onions, peppers, and sausage to pan

Cook, stirring occasionally till sausage is browned a bit and peppers, onion are al dente

Add Ranchera sauce (you can use a milder salsa if you're "heat" sensitive)

Simmer till good and hot.

(mushrooms and/or black olives would be good in this too)

Put over rice or in tortillas with cheese, sour cream and cilantro.
