Pear Blue Cheese And Candied Pecan Salad Recipe
A wonderful salad to serve with chicken dishes. Great in the fall when the pears are juicy and ripe.

Ingredients
  • 1 Bartlett, Bosc, Comice or Red Anjou pear, peeled, seeded and sliced
  • 2/3 cup candied pecan halves (or walnuts)
  • 6 cups baby salad greens including baby spinach
  • 1/2 cup blue cheese, crumbled
  • 1/2 cup extra virgin olive oil
  • 2 Tbsp. apple cider vinegar
  • 1 teas. Dijon mustard
  • 2 Tbsp. Maple Syrup

Directions
  1. Place baby salad greens in large, low salad bowl or plate. Arrange pear slices on top. Scatter with candied nuts and blue cheese.
  2. Combine oil, vinegar, mustard and maple syrup. Whisk thoroughly and lightly dress salad. Pass remaining dressing when serving salad.

This is one of our favorite salad combinations - the flavors are so good together...love the dijon in the dressing. Mine doesn't have maple syrup in it (just regular sugar), but I will definitely be trying it your way - thanks!
