Grandma Haleys Ginger Cookies Recipe

Grandma Haleys Ginger Cookies Recipe
These were one of my favorite cookies growing up. My best friend's Grandmother made them every time we got together. It is a very old recipe according to her. They are a melt in your mouth ginger cookie with delicate flavors ....ummmmm.

Ingredients
  • 1 cup sugar
  • 1/4 cup shortening
  • 1/2 cup butter
  • 2 eggs
  • 1 tsp Vanilla extract
  • 2 Tablespoons molasses
  • 3 cups unbleached flour
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 cup cinnamon sugar

Directions
  1. In mixer bowl, cream sugar with shortening and butter
  2. While that is working, sift together all dry ingredients: flour, ginger, cinnamon, soda, baking powder.
  3. After butter, shortening and sugar are creamed, add one egg at a time and beat well. Then beat in the molasses and vanilla.
  4. Slowly tap in the dry ingredients while mixer is on slow. This makes a soft dough.
  5. Place dough in refrigerator for at least an hour.
  6. Take enough dough and roll it round in your hand. I make them about 1 to 1 1/2 inch diameter balls. Then roll them in the cinnamon sugar (about 1/2 cup sugar with a level teaspoonful of cinnamon).
  7. Place on an ungreased cookie sheet and bake for about 12 minutes at 350 degrees.
  8. Cool on racks.
