How to make it

  • Preheat oven to 350.Grease & flour, 2 - 8 inch cake pans.Set flour mixture aside.
  • Combine first 8 ingredients in a small bowl and stir with a fork to mix.Set aside.
  • Cream shortening and sugar in a large bowl with a mixer.Mix until fluffy about 5 minutes.Add eggs one at a time.Add vanilla.At low speed add flour,alternating with milk,a little at a time.Mix until just combined.
  • Pour equally into both cake pans.
  • Place in oven and bake 25 minutes,until toothpick comes out clean.
  • Cool in pans 5 minutes,before turning out onto a cooling rack.
  • When cake is cool mix all icing ingredients in a small bowl with an electric mixer.Flip cake layers over to smooth side.You may fill with your choice of jam,marshmallow fluff or the buttercream.I used lemon curd. Place top cake layer over filling.Spread icing over cake and frost top and sides.
  • You may want to chill cake a while to firm up buttercream,before serving.
  • Makes a lovely birthday cake!
