Ingredients

Ingredients and directions together.

Directions

Combine in a large bowl:

4c thin strips cooked chicken

1 11oz. can mandarin oranges,drained and juice reserved

2/3c sliced scallions

1/2c chopped roasted peanuts

Whisk together:

about 2/3c reserved orange juice

1/2c peanut oil

2 Tbs fresh lemon juice

11/2 tsp chili oil,or to taste

1 tsp soy sauce

1 tsp minced peeled fresh ginger

1/2 tsp salt or to taste

1/4 tsp ground Szechuan peppercorns oe black pepper

Pour 2/3c dressing over the chicken mixture and toss to combine. Taste and adjust seasoning.

Serve the salad over:

4c shredded Napa cabbage

Top with:

1c chow mein noodles
