How to make it

  • Combine in a large bowl:
  • 4c thin strips cooked chicken
  • 1 11oz. can mandarin oranges,drained and juice reserved
  • 2/3c sliced scallions
  • 1/2c chopped roasted peanuts
  • Whisk together:
  • about 2/3c reserved orange juice
  • 1/2c peanut oil
  • 2 Tbs fresh lemon juice
  • 11/2 tsp chili oil,or to taste
  • 1 tsp soy sauce
  • 1 tsp minced peeled fresh ginger
  • 1/2 tsp salt or to taste
  • 1/4 tsp ground Szechuan peppercorns oe black pepper
  • Pour 2/3c dressing over the chicken mixture and toss to combine. Taste and adjust seasoning.
  • Serve the salad over:
  • 4c shredded Napa cabbage
  • Top with:
  • 1c chow mein noodles
