How to make it

  • Line a cookie sheet with baking parchment. Spray it lightly with oil.
  • Cook the diced potatoes in a saucepan of boiling water for about 20 minutes, or until soft. Drain the liquid, and mash the potatoes.
  • Transfer the mashed potatoes to a large bowl and stir in the flour, baking powder, nutmeg and brown sugar. Mix well.
  • Stir in the raisins, beaten egg and heavy cream. Mix thoroughly with a spoon until completely smooth.
  • Shape the mixture into 8 biscuits about 3/4-inch thick and put on the cookie sheet. It might help if you dust your hands with flour. If the biscuits are too sticky, just dip them lightly in some extra flour while shaping them.
  • Bake in preheated 400F oven for about 25 minutes, or until the biscuits are golden.
  • As soon as they come out of the oven, spread the tops of biscuits with soft butter, and sprinkle with brown sugar. Serve warm, with extra butter.
