Grilled Cumin Chicken With Fresh Tomatillo Sauce Recipe

Ingredients

2tsp olive oil

1/2tsp ground cumin

1/8 tsp pepper

2 garlic cloves,minced

4 skinless,boneless chicken breast halves

1/2lb tomatillos

1/2c chicken broth

1/4c cilantro leaves

1/4c chopped green onion

2 tbs fresh lime juice

1/2tsp sugar

1/4tsp salt

1 garlic clove,chopped

1 jalapeno pepper,seeded and chopped

1/4 tsp salt

cooking spray

Directions

Combine first 4 ingredients in large bag. Add chicken,seal and let stand 15 mins.

Discard husks and stems from tomatillos. Combine tomatillos and broth in small saucepan over med-high heat;cover and cook 8 mins. Drain;cool slightly.Combine tomatillos,cilantro and next 6 ingredients(through jalapenos) in food processor. Process till smooth.

Remove chicken from bag;discard marinade. Sprinkle chicken evenly with 1/4tsp salt. Place on grill rack coated with spray;grill 6 mins. each side or till chicken is done. Serve with tomatillo sauce.
