SMOKY PAN CARNE ASADA This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Nicholas Estate in Mabank, Texas in 1984.

Ingredients
  • 6 pounds skirt steak sliced thin
  • 2 large red onions sliced thin
  • 1 teaspoon cumin
  • 3 heads crushed fresh garlic
  • 6 tablespoons chopped fresh cilantro
  • 6 tablespoons fresh squeezed limejuice
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 fresh jalapeno peppers sliced
  • 1/2 freshly squeezed orange juice
  • 2 tablespoons liquid smoke

Directions
  1. Place all ingredients in large plastic bag and marinate overnight.
  2. When marinated put meat into fry pan and cook to desired doneness.
  3. Serve with hot tortillas and desired garnishes.
