This dish marries sweet and smoky to create a fantastic & flavorful side dish. The combination lowers the glycemic index of the White Potato to make it diabetic friendlier.

For a change, try adding some roasted corn and chopped green chilies.

Perfect for this Easter dinner! Thx so much for this one. Mom's diabetic and she loves sweet potatoes. You're my gift for today! Tina

This sounds like it would taste amazing but what exactly is a smoked potato? I'd definitely like to try this recipe out. Thanks

A smoked potato would be one that has been cooked in a smoker (usually obtained from a bbq place). I suppose if you can't find one you could use a regular baked potato with a few drops of liquid smoke.
