Smoky Sweet Potato Mash Recipe
This dish marries sweet and smoky to create a fantastic & flavorful side dish. The combination lowers the glycemic index of the White Potato to make it diabetic friendlier.

Ingredients
  • 1 large smoked potato, cut into 1" cubes
  • 2 large sweet potatoes, cut into 1" cubes
  • 1/4 - 1/2 c cream (your taste/consistency)
  • 2-3 T unsalted butter (your taste/consistency)
  • Salt and White Pepper to taste

Directions
  1. Boil (salted water) or roast the sweet potatoes (400 F tossed in a little oil) until tender (usually about 20 minutes for boiling, 30 for roasting).
  2. Place in a mixer with the potato, 2-3 T butter, and about 3-4 T cream. Cream the mixture. Add more cream and butter to reach the desired consistency. Season to taste with Salt and White pepper.
  3. Alternative: Try adding 1 tsp fresh thyme leaves.
  4. I've served this to accompany pan crisped duck breast confit with blackberry sauce and mushroom infused wild rice.
