How to make it

  • Using a fork, scrape lenthwise down the side of the cucumber at intervals through the green skin to create decorative ridges. Then slice thinly.
  • Salt the sliced cucumber and let sit in a colander for half an hour, stirring occasionally. Drain well and the add remaining ingredients.
  • Refrigerate at least 2 hours or overnight before serving.

    I'm just recipe perusing, and this caught my eye... sounds delicious!

    But, you know me crabby... I'm going to substitute chili paste for the red pepper flakes :-)
    if this works out, I'm going to try it with ginger essential oil also.
