Ingredients
  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 20-ounce can crushed pineapple
  • 2 teaspoons baking soda
  • 2 eggs, slightly beaten
  • 1 cup evaporated milk
  • 2 cups flaked sweetened coconut
  • 2 cups chopped pecans
  • 1 cup drained, chopped maraschino cherries
  • 1 1/2 cups sugar
  • 2 sticks margarine

Directions
  1. Combine flour, sugar, pineapple, soda and eggs and bake in 9x13-inch pan at 350 F until cake is done (test by toothpick).
  2. When cake is almost done, combine evaporated milk, coconut, pecans, cherries, sugar and margarine and bring to a boil stirring constantly.
  3. Pour mixture over hot cake.
  4. Serve warm.

This really sounds rich and yummy... the kind of cake thats sticks to your wasteline... LOL....


This is a very moist cake...being cajun myself..this a trade-make cake for me at church and pot-luck suppers.
