This recipe comes from a city in north Iraq called Mosul, it's one of my son's favorite dishes.

Ingredients
  • 1/2 cup Burgol White
  • 1 cup Jareesh
  • 1/4 KG Minced Extra Fat Mouton Meat
  • 1 Medium Capsicum, Chopped Small
  • 1 Medium Onion, Chopped Small
  • 1 Medium Tomato, Chopped Small
  • 2 tbsps Tomato Paste
  • 1 Egg
  • 1/3 tbsp Table Salt (or as desired)
  • 2 tbsps Vegetable Oil
  • 1/2 tbsp Garam Masala
  • 1/2 tbsp Cumin powder
  • 1 tbsp Curry powder
  • 1/2 tbsp Backing Powder
  • 1/4 cup water
  • For the face
  • 1 EGG
  • 2 tbsps VEGETABLE OIL

Directions
  1. Mix the Burgol and the Gareesh, wash then soak in the water for 15 minutes.
  2. Add the meat, cpsicum, onion, tomato, tomato paste, egg, salt, oil, garam masala, cumin, curry, Baking Powder to the Burgol and Gareesh then mix well and leave for 1 hour.
  3. Oil a frying pan (40cm*30cm) and apply a layer of 1 cm of the mix.
  4. Mix the egg and the Oil and apply on the face of the mix in the pan.
  5. Heat the stove then lower the heat.
  6. Put the pan in the stove and bake for 25 minutes.
  7. Take the pan out, cut to pieces (as desired) then return to the stove and bake for another 10 minutes on light heat untill the face gets a brownish colour.
  8. Take the pan out, cover and keep to cool for 15 minutes.

What is jareesh in English?


Sounds delicious! Jareesh appears to be a type of cracked wheat.


This was also a favorite of mine. It may be a little difficult to find some of the ingredients in certain parts of the U.s. but if you are the adventurous type and a little curious you will probably enjoy this. Also, it's a great photo. High 5...


It does sound good--the spices sing to me. What do you mean by "Face", is it the on top of the ingredients in the cooking vessel, or is it the bottom of the cooking vessel? Borgol is rice?
