Roasted Beets With Goat Cheese

- 4 medium to large beets shopping list
- 4 Tbl. apple cider vinegar shopping list
- 4 Tbl. Dijon mustard shopping list
- 4 Tbl. (more or less if you like) Soft goat cheese (Chevre or the like) shopping list
How to make it
- Roast beets at about 400F for about an hour or until soft
- Let beets cool, peel skin, and cut into about 1/2 to 3/4 inch cubes
- Combine vinegar and mustard
- Briefly saute beets in a very hot skillet, add mustard sauce and reduce slightly until sauce sticks to the beets
- Add about half of the cheese, toss to mix in cheese and plate, topping the beets with the rest of the cheese
