Roasted Beets With Goat Cheese Recipe
I was not a big fan of beets until a friend introduced me to this dish. Amazing flavors come forth from roasting the beets and pairing with the other ingredients.

Ingredients
  • 4 medium to large Beets
  • 4 Tbl. Apple Cider Vinegar
  • 4 Tbl. Dijon mustard
  • 4 Tbl. (more or less if you like) Soft Goat cheese (Chevre or the like)

Directions
  1. Roast beets at about 400F for about an hour or until soft
  2. Let beets cool, peel skin, and cut into about 1/2 to 3/4 inch cubes
  3. Combine vinegar and mustard
  4. Briefly saute beets in a very hot skillet, add mustard sauce and reduce slightly until sauce sticks to the beets
  5. Add about half of the cheese, toss to mix in cheese and plate, topping the beets with the rest of the cheese

I agree, I have had similar!


I tend not to measure any of my ingredients. Ever. The 4-4-4-4 ratio is just a ballpark guess from my experience. Try what you think looks right, and I'm sure it will be good. Kinda like strawberries and chocolate. Any ratio tends to work well.
