  • Dressing:
  • 6 Table. rice vinegar
  • 4 Table. dark sesame oil
  • 2 Table. sodium-reduced soy sauce
  • 1 (6 oz.) can Frozen Pineapple Juice concentrate, undiluted
  • Salad:
  • 1 cup diced cooked chicken breast
  • 1 cup cooked shrimp
  • 2 cups thinly sliced mushrooms, fresh
  • 2 cups pea pods, steamed for 2 minutes, and chilled
  • 1/2 cup sliced water chestnuts
  • 3 scallions cut into 1 inch pieces
  • 6 cups napa cabbage
  • 1 cup fresh bean sprouts
  • 1 cup homemade toasted chowmein noodles (recipe below)
  • Fresh pineapple slices for garnish, optional

Directions
  1. Mix together all ingred. for dressing. cover tightly, and refrigerate.
  2. Combine all salad ingred, except noodles and fresh pineapple, and toss with the chilled dressing. Mix well.
  3. To serve, spoon 2 cups of the salad onto each of 8 chilled plates. Sprinkle 2 Table. chow mein noodles over the top of each serving. Add the pineapple slices.
  4. Homemade Chow Mein Noodles
  5. 1 oz. whole wheat spaghetti
  6. 2 cups water
  7. Preheat oven to 375 F. Break the spaghetti into 2 inch pieces and place in a small saucepan. Cover the noodles with the water. Bring to a boil, and cook for 15 minutes. Drain thoroughly.
  8. Spread the drained pieces on a large baking sheet and place in the preheated oven for 1 hour, turning frequently to toast evenly. (Keep a careful eye on the noodles--375 F times 1 hr seems too intense to me. As you can see, I haven't made this yet)

Sounds like a perfect summer meal! Do you use regular rice vinegar or a seasoned rice vinegar?


I think I would choose seasoned rice vinegar, but it is personal preference.
