Lazy Perogy Casserole Recipe

Ingredients

12 lasagna noodles

2 cups cottage cheese

1 egg

1/4 tsp onion salt (I used 2 Tbsp. fresh chopped chives)

1 cup shredded cheddar cheese

2 cups mashed potatoes

2 Tbsp. fresh chopped dill

1/4 tsp salt

1/4 tsp pepper

1/4 tsp more onion salt or 2 Tbsp. fresh chopped chives

1 cup butter or margarine

1 cup chopped onions

Sour cream

Fresh chives and dill for garnish

Directions

Cook noodles as directed on package. Drain. Line bottom of 9"x13" pan with 4 noodles. In medium bowl, mix cottage cheese, egg, and onion salt or chives together. Spread over noodles. Cover with layer of 4 more noodles.

In same bowl, mix Cheddar cheese with potatoes, salt, onion salt and pepper. Spread over noodles. Cover with another layer of 4 more noodles. Melt butter in pan, sauté onions until transparent and soft. Pour over noodles. Cover.

Bake 30 minutes in 350°F oven. Let stand for 20 minutes before cutting. Garnish with sour cream and chopped fresh chives or fresh dill.

Mmm! This sounds fantastic! Every Christmas Eve, our whole family comes over and we all pinch "Porhya," which is Bulgarian or Ukrainian for Pierogis. (Also, it's my son's request for his birthday [4th of July!] dinner.) So much work, but so worth it! This might help to sooth a craving in between! Thanks for the recipe!
