Ingredients
  • 1 1/2 cups water
  • 1 egg
  • Dash of salt
  • 1 cup sugar
  • 2 heaping tbls flour
  • Juice of one lemon (1-2 T. of lemon juice is fine)
  • 1 T. butter
  • 10-12 bananas
  • 1 cup crushed cocktail peanuts

Directions
  1. Put the water on to boil.
  2. In medium bowl, beat one egg w/salt.
  3. Add 1 cup sugar.
  4. Pour into medium saucepan over medium high heat.
  5. Add 2 heaping tbls flour and stir to combine well.
  6. Add lemon juice and stir.
  7. Add 1-1/2 cups boiling water and cook until thickened like thin pudding.
  8. Add the butter. Stir well.
  9. Chill until cooled.
  10. Slice the bananas and mix with the pudding.
  11. Place in serving bowl and top with crushed peanuts.
  12. Chill.
  13. Enjoy.
