Chicken Cacciatore - My Version Recipe
I'm Italian and never made this before, and like to make a slow cooking dish for Sunday on Saturday and thought, well lets try this. Got a lot of recipes and came up my version. Hope you enjoy as much as we did.

Ingredients
  • 4 leg quarters
  • 4 drumsticks
  • 4 large chicken breasts
  • 2 cups flour
  • 2 tsp paprika
  • 2 tsp Italian Seasoning
  • salt & pepper to taste
  • 1/4 cup parmesan cheese
  • Olive OIl
  • 2-3 large onions sliced and then cut in half
  • 3 large red peppers cut up (not too small but about 1" x 1")
  • 3 large green peppers cut up the same way
  • 8 cloves garlic chopped
  • 3 (small) pkgs button mushrooms quartered
  • 1 jar (12 oz) roasted red peppers drained and sliced
  • 2 (28 oz) Diced Italian Tomatoes with juice
  • 1 can tomatoe paste
  • 1/2 to 3/4 cup Marsala or Dry Red Wine
  • 2 tbsp Sundried Tomatoe paste or sun dried tomatoes in oil chopped
  • Seasoning:
  • Salt & Pepper
  • 3 tsp Italian Seasoning
  • 3 tsp Basil
  • 3 tsp Oregano
  • 2 tsp Garlic Powder
  • 3/4 cup Parmesan cheese
  • 1/2 tsp red pepper flakes

Directions
  1. Preheat oven to 500
  2. In large bowl, add flour with paprika, Italian Seasoning, salt, pepper and cheese.
  3. In large frying pan, heat olive oil (1/4-1/2 cup)
  4. Drudge chicken thru flour and fry on both sides till brown
  5. Remove and put in a LARGE baking pan
  6. Continue till all chicken is done, pour oil over chicken
  7. Cut up all veggies and put over chicken in pan
  8. In large bowl, add tomatoes with juice, paste, sundried tomatoes,
  9. wine, cheese, and Seasonings, mix well
  10. Pour over chicken and be sure to cover the chicken with the mixture.
  11. Cover pan and put in 500 oven for 30 minutes.
  12. Lower heat to 300 and continue cooking for atleast 4 hours, stirring
  13. occasionally, be careful not to breakup chicken toward the end of cooking time.
  14. Serve with pasta or macroni of choice.
  15. When serving, be very careful when removing chicken as it will start to fall off the bone.

That's one impressive list of ingredients! Like donman, sounds like a lot of work, but would be worth it! I'd have to have company with this one, cuz it's just me and the old man. ;')
