Ingredients

How to make it

  • Preheat oven to 400F.
  • Sift together all of the dry ingredients ( flour, sugar, soda, powder and salt) into a medium-sized bowl and set aside.
  • Crack the eggs into another mixing bowl and gently whisk until the yolk and whites are mixed together.
  • Stir into the eggs, the yogurt, oil and 1 teaspoon of the lemon zest. Mix thoroughly.
  • Stir the dry ingredients into yogurt mixture until just blended.
  • Gently stir in the blueberries until evenly distributed through the batter.
  • Spoon the batter into prepared muffin cups, filling each cup 3/4 full. (You can either butter the muffin cups or use cupcake papers.
  • Bake for 12-15 minutes or until golden brown.
  • Cool slightly.
  • For the glaze, combine the remaining lemon peel, powdered sugar and milk in a small bowl; mix well. Drizzle over each muffin.

    OK, I made these! These were so easy, the hardest part was picking blueberries, LOL! These are sooo goood! I could smell them in the oven, and couldn't wait to take a bite! I ate one as soon as they were done, and had to restrain from eating another! These came out moist, and melt in your mouth, I think the yogurt helped with that. I added a picture. Thanks again for a great recipe!
