Lenoras Tamale Pie Recipe
I make this every once in awhile because its richer the second day and when it gets like that sharing is questionable. What? Like you haven't thought the same way about your recipes !!!

Ingredients
  • 1 1/2 lb. hamburger (or ground turkey)
  • 1 med. size onion
  • 2 c. stewed tomatoes
  • 1 sm. can tomato sauce
  • 2 c. whole kernel corn
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbsp. chili powder
  • 1 clove garlic, minced
  • 1/4 c. green pepper, chopped
  • **********************************
  • Crust:
  • 1 1/2 c. milk
  • 1/2 c. cornmeal
  • 2 tbsp. butter
  • 1 tsp. salt
  • 1 c. shredded Colby and Monterey Jack cheese, mixed

Directions
  1. For Crust: Mix the milk, cornmeal, butter and salt; cook until thick. Stir constantly so not to form any lumps. Set aside.
  2. Brown hamburger and onion.
  3. Add tomatoes, sauce, corn, green pepper and seasonings and cook for about 20 minutes.
  4. Allow to cool slightly.
  5. Pour half of the corn meal mush into a well greased 8 x 12 inch baking dish or large casserole.
  6. Sprinkle 1/2 cup of the cheese on top of the corn meal mush.
  7. Pour the meat sauce ontop of the cheese.
  8. Sprinkle the remainder 1/2 cup of cheese ontop of the meat mixture. Then the remainder of the cornmeal mush to finish off the top of the casserole.
  9. Bake until top is browned at 350 degrees, about 45 minutes to 1 hour.

Alterations


To keep the calories down you can use chicken broth when making the corn meal mush instead of the butter and milk. Also as a variation with the flavors use pepper Jack and cheddar cheeses.
