Lemon Glazed Cashew Shortbread Recipe
These are incredible. I got this recipe from my niece who learned to make these while she was stationed in Germany. A huge hit in our family, hope you enjoy as much as we do.

Ingredients
  • 3/4 cup powdered sugar
  • 1-1/4 cup butter softened
  • 3 cups all purpose flour
  • 1/2 cup finely chopped cashew nuts
  • 1 teaspoon ginger
  • 1/2 cup coarsely chopped cashew nuts
  • Glaze:
  • 1 cup powdered sugar
  • 1 teaspoon grated lemon peel
  • 4-6 teaspoons lemon juice

Directions
  1. Preheat oven to 325.
  2. In large bowl combine powdered sugar and butter then beat until light and fluffy.
  3. Add flour, 1/2 cup finely chopped cashews and ginger then mix well.
  4. Press dough evenly in ungreased jelly roll pan then sprinkle with coarsely chopped nuts.
  5. Press lightly into dough then bake at 325 for 25 minutes and place pan on wire rack.
  6. Immediately cut into squares and cut each square diagonally in half.
  7. Cool in pan 30 minutes or until completely cooled.
  8. Combine all glaze ingredients adding enough lemon juice for desired drizzling consistency.
  9. Remove cooled cookies from pan and place on waxed paper then drizzle with glaze.
