Easy Cuban Black Beans And Rice Recipe
Sometimes, one csan cover dry beans with boiling water and let stand a few hours instead of overnight soaking. No matter this is a very easy and tasty recipe and goes well over white or brown rice

Ingredients
  • 1 lb dried black bean, sorted and rinsed
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 5 cloves garlic, finely chopped
  • 2 bay leaves
  • 1 14.5-oz can diced tomatoes, undrained
  • 5 cups water
  • 2 Tbs olive oil
  • 4 Tbs ground cumin (optional)
  • 2 finely chopped jalapenos( or as desried )
  • 1 tsp salt
  • 4 cups hot cooked rice, for serving

Directions
  1. Soak beans overnight and discard soak water.
  2. Combine all ingredients except rice in crock-pot and cook on low for 6 to 8 hours or until beans are tender and most of the liquid is absorbed.
  3. Remove bay leaves.
  4. Serve beans over rice.
