How to make it

  • In a jar with a tight fitting lid, combine the dressing ingredients.
  • Shake like crazy. Good exercise!
  • Let stand a room temp for 40 minutes to meld the flavors.
  • Shake vigorously just before pouring just enough to moisten the chunks of melon and cukes.
  • Chill and serve.
  • Great with a grilled meat. Especially a grilled lamb! Good marriage of flavors.

    You are right, the cucumber and the melon are the salad part and you shake the other ingredients to pour over the cukes and melon pieces. Sorry I wasn't clear enough in the directions. But the flavors are great and cucumbers seem to be underutilized veggie. I love them and you can't beat them when mixed in a benedictine spread. Yum. :)

    Sounds like a great combination of flavors. I take it the melon and cucumber are not part of the dressing ingredients? (Sorry if it's obvious, figured I should make sure.)
