Chicken With Caramelized Onions

- 1 tablespoon olive oil shopping list
- 2 large sweet onions thinly sliced and separated into rings shopping list
- 2 teaspoons granulated sugar shopping list
- 4 boneless skinless chicken breast halves shopping list
- 2 tablespoons grainy Dijon mustard shopping list
- 3/4 teaspoon cracked black peppercorns shopping list
How to make it
- Heat oil in skillet then sauté onions until tender then add sugar after first 5 minutes of cooking.
- Stir occasionally for 15 minutes then remove onions from skillet and set aside.
- Brush chicken on both sides with mustard then sprinkle with pepper.
- Sauté in the same skillet over medium heat about 5 minutes per side or until cooked through.
- Arrange reserved onions over the chicken and heat through then serve
