Spinach With Bacon And Mushrooms Recipe

Ingredients

2 slices bacon diced

1/2 cup finely chopped white onion

2 cups sliced mushrooms

1 pound fresh spinach leaves well washed and stems removed

1/8 teaspoon freshly ground pepper

Directions

Cook bacon in a large nonstick skillet over medium heat until crisp.

Remove with a slotted spoon to a paper towel then set aside.

In same skillet cook onion in bacon drippings 1 minute over medium heat.

Add mushrooms then raise the heat to medium high and cook and stir 4 minutes.

Add spinach then cook and stir just until it is wilted about 1 minute.

Sprinkle with reserved bacon and ground pepper.
