Candy Easter Eggs Recipe
These are easy to make, home-made chocolate covered Easter eggs. I remember a German family in my town making these and me loving them. Get creative.

Ingredients
  • 1 cup hot mashed potatoes (OR 1 cup instant)
  • 1 box confectioners sugar
  • Flavor Ingredients: chopped dates, coconut, 1 T. peanut butter, 1 tsp. vanilla or peppermint extract (use food coloring or leave white)
  • Chocolate coating: 1/2 lb. simi-sweet chocolate squares, 2 Tbsp. water, 2 Tbsp. butter.

Directions
  1. Work together the sugars into hot potatoes, using as much sugar as mixture will absorb without becoming crumbly.
  2. Divide mixture into quarters and add any of the listed flavor ingredients to each quarter.
  3. Shape the candy into eggs and chill in the refrigerator.
  4. Melt chocolate in a double boiler, stir in water and butter.
  5. Keep mixture hot while dipping eggs into it.
  6. Use a fork to dip the egg into chocolate.
  7. Place eggs on waxed paper to dry.
