How to make it

  • In large bowl, combine cucumbers, onion, peppers, carrot, garlic and salt.
  • Add ice cubes and toss. Let stand 5 hours.
  • Drain well.
  • In small saucepan, combine remaining ingredients. Bring to a boil.
  • Pack drained vegetables into a 1 quart jar (an empty glass mayonnaise jsr works well.)
  • Pour hot liquid over.
  • Cap and chill 24 hours before serving.

    I love this recipe. We eat this as a side dish to red beans or white beans and rice...umm, so good!

    One of my neighbors that use to live here made something like this but never shared her recipe. Great post, glad to finally have it, have you ever tried to put cauliflower etc in it? You have my five.
