Quick Pickles

- 3 cups unpeeled cucumbers, thinly sliced shopping list
- 1 medium onion, thinly sliced shopping list
- 1 small green bell pepper, cut into strips shopping list
- 1 small red bell pepper, cut into strips shopping list
- 1 carrot, peeled and thinly sliced shopping list
- 1 clove garlic, crushed shopping list
- 1 teaspoon salt shopping list
- 8 cups ice cubes shopping list
- 3/4 cup granulated sugar shopping list
- 1 teaspoon mustard seed shopping list
- 1/4 teaspoon celery seed shopping list
- 1/8 teaspoon turmeric shopping list
- 1/2 cup white vinegar shopping list
How to make it
- In large bowl, combine cucumbers, onion, peppers, carrot, garlic and salt.
- Add ice cubes and toss. Let stand 5 hours.
- Drain well.
- In small saucepan, combine remaining ingredients. Bring to a boil.
- Pack drained vegetables into a 1 quart jar (an empty glass mayonnaise jsr works well.)
- Pour hot liquid over.
- Cap and chill 24 hours before serving.

One of my neighbors that use to live here made something like this but never shared her recipe. Great post, glad to finally have it, have you ever tried to put cauliflower etc in it? You have my five.
