Roasted Eggplant Salsa

- 1 large eggplant(about 1lb.) ends trimmed,cut into 1" cubes shopping list
- 1/4c rice vinegar shopping list
- 2Tbs sesame oil shopping list
- 4tsp soy sauce shopping list
- 1Tbs minced,fresg ginger shopping list
- 1Tbs sugar shopping list
- 1 large red bell pepper,cored and diced shopping list
- 1 small red onion,diced shopping list
- 1 jalapeno pepper,seeded and finely chopped shopping list
- salt and fresh ground black pepper to taste. shopping list
How to make it
- Heat oven to 400. Coat baking sheet with cooking spray.
- Arrange eggplant cubes on the prepared baking sheet and roast,stirring occasionally,for 20 mins.,or till lightly browned or completely tender. Cool slightly.
- Menawhile,in large bowl,combine the vinegar,sesame oil,soy sauce,ginger and sugar. Stir to dissolve the sugar. Add red pepper,onion,jalapeno and roasted eggplant. toss to combine and season with salt and pepper.
- The eggplant can also be skewered and grilled, making it great for a BBQ!
