This is a boldly flavored steak that's perfect with grill-roasted potatoes and a big salad! Use your favorite cut of boneless steak, 1" thick. From BHG New Grilling Book.

Ingredients
  • 4 boneless beef top loin steaks, 1" thick
  • 1 1/2 c chopped onion
  • 4 cloves garlic
  • 1/4 c butter or margarine
  • 1/4 t celery salt
  • 1/4 t fresh ground black pepper
  • 1/4 c dry red wine
  • 2 T soy sauce
  • 8 oz fresh mushrooms, wiped clean and quartered
  • 1/4 c butter or margarine, as needed (in addition to that listed above)
  • Skewers

Directions
  1. Cut a horizontal pocket in each steak, cutting to but not through the other side; set aside
  2. In a large skillet, cook onion and garlic in the margarine or butter, until onion is tender
  3. Stir in celery salt and pepper
  4. Stuff pockets with onion mixture, skewer closed
  5. Reserve onion pan with drippings
  6. Mix wine and soy together and brush on steaks
  7. CHARCOAL GRILL
  8. Grill steaks on the rack of an uncovered grill directly over medium coals
  9. Allow 10-12 minutes for med. rare (145 *F)
  10. Allow 12-15 minutes for med. (160 *F)
  11. Turn steaks only once, halfway through grilling time
  12. GAS GRILL
  13. Preheat grill
  14. Reduce heat to medium
  15. Place steaks on grill rack over heat, cover and grill as above
  16. Meanwhile, wipe mushrooms clean and quarter
  17. Saute in onion pan, adding more margarine or butter if needed
  18. Serve mushrooms on top of steaks.
