Grilled Onion Stuffed Steak with Sauteed Mushrooms

- 4 boneless beef top loin steaks, 1" thick shopping list
- 1 1/2 c chopped onion shopping list
- 4 cloves garlic shopping list
- 1/4 c butter or margarine shopping list
- 1/4 t celery salt shopping list
- 1/4 t fresh ground black pepper shopping list
- 1/4 c dry red wine shopping list
- 2 T soy sauce shopping list
- 8 oz fresh mushrooms, wiped clean and quartered shopping list
- 1/4 c butter or margarine, as needed (in addition to that listed above) shopping list

How to make it
- Cut a horizontal pocket in each steak, cutting to but not through the other side; set aside
- In a large skillet, cook onion and garlic in the margarine or butter, until onion is tender
- Stir in celery salt and pepper
- Stuff pockets with onion mixture, skewer closed
- Reserve onion pan with drippings
- Mix wine and soy together and brush on steaks
- CHARCOAL GRILL
- Grill steaks on the rack of an uncovered grill directly over medium coals
- Allow 10-12 minutes for med. rare (145 *F)
- Allow 12-15 minutes for med. (160 *F)
- Turn steaks only once, halfway through grilling time
- GAS GRILL
- Preheat grill
- Reduce heat to medium
- Place steaks on grill rack over heat, cover and grill as above
- Meanwhile, wipe mushrooms clean and quarter
- Saute in onion pan, adding more margarine or butter if needed
- Serve mushrooms on top of steaks.
