Tourtière is a French Canadian favourite of mine and there are several versions of this one recipe. I prefer making my own pastry for the crust as opposed to purchasing frozen but it's up to you.

Ingredients
  • 1-1/4 lbs. lean ground pork
  • 1/2 lb. lean ground beef
  • NOTE: You can use ground meat of your choice ie. turkey, buffalo, ostrich...
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg or cloves
  • 1 medium onion, finely chopped
  • 1 carrot, grated or finely chopped
  • 1 apple, grated or chopped
  • 1 celery rib, finely chopped
  • 1 potato, cut into small cubes
  • Note: I like to add 1-2 cloves of minced garlic
  • 1/2 cup water or beef broth
  • Note: When the meat and veggie mixture has cooled, I know some people who like to add hard boiled eggs that have been coarsely chopped or quartered.
  • 1 tsp. salt (not necessary if using beef broth)
  • 1/2 tsp. pepper
  • Note: I have sometimes added a teaspoon/splash of Brandy
  • Double 9" Pie Crust:
  • 2 cups flour
  • 1 tsp. salt
  • 3/4 cup vegetable shortening and butter mixed
  • 5-6 Tbsp. ice cold water

Directions
  1. Place all ingredients into a deep frying pan and cook covered on a low heat for approximately 1 hour or until meat and veggies are tender and liquid has reduced.
  2. Stir occasionally.
  3. Allow meat mixture to cool before pouring into pastry.
  4. Put bottom crust in pie plate, spread mixture evenly and place top pastry on mixture.
  5. Trim and crimp the edges.
  6. Create slits in the top pastry to allow the steam to escape.
  7. Place in a 400 degree oven until lightly browned , 25 to 30 minutes, depending on oven.
