Ravioli Alfredo With Shrimp

- 1 pkg (24 oz) frozen, large,round cheese ravioli shopping list
- 4 plum tomatoes,chopped, (2 cups) shopping list
- 2 cloves garlic,crushed shopping list
- 2 Tbs olive oil shopping list
- 1/4 c sliced fresh basil shopping list
- 2 Tbs white balsamic vinegar shopping list
- 1/8 tsp pepper shopping list
- 1 small red onion,diced (1/4c) shopping list
- 18 medium shrimp (3/4 lb),peeled and deveined,tails left on shopping list
- 1 jar (16 oz) alfredo sauce shopping list
How to make it
- Cook ravioli according to pkg directions.
- Meanwhile,in bowl ,toss tomatoes with half of garlic,1 Tbs oil,sliced basil,vinegar and pepper;reserve.
- In large non-stick skillet,heat remaining 1 Tbs oil over med.heat
- Add remaining garlic,onion and shrimp;cook,stirring until shrimp are lightly browned,4 to 5 mins. Stir in alfredo sauce and 1/4 cup water. Bring to simmer,cook 4 mins,stirring occasionally. Drain the ravioli,add to skillet. Cook,stirring gently for 3 mins
- Serve shrimp and ravioli with reserved tomato-basil mixture. Garnish with additional basil.
- Note: The second time I made this,I found I liked the tomato mixture added in the dish the last minute or two so it warms up,instead of serving cold on top.
