Best Ham  Potatoes Au Gratin Recipe
This is great to take to potluck summer cookouts, but also tastes great all winter. It's even good to eat the cold leftovers!

Ingredients
  • 1 1/4 cup cooked ham
  • 3 cups diced potatoes
  • 1/3 cup green onion
  • 1/3 cup green pepper
  • 2 Tablespoons butter
  • 1 Tablespoon plain flour
  • dash black pepper
  • 1 cup milk
  • 1 cup packed or heaping shredded sharp cheddar
  • 1/3 cup Ranch dressing

Directions
  1. Heat oven to 350. Spray a 1-1/2 quart casserole dish.
  2. Cook potatoes in microwave in 1/4 cup water, stirring halfway through (important!).
  3. Gently mix ham and potatoes. Spread in casserole dish.
  4. Cook onion and green pepper in butter till tender. (Do not saute with ham - tastes better separate.) Stir in flour and black pepper.
  5. Add milk all at once and bring to a light boil, stirring constantly.
  6. Reduce heat to very low or turn off altogether.
  7. Add cheese and dressing. Stir till cheese melts.
  8. Pour sauce over potatoes and ham.
  9. Bake for 30-35 minutes in oven OR about 8 minutes in microwave.
