My kids don't like pineapple or coconut, so this is what I make for just my hubby and me! YUM! I'm allergic to alcohol, but feel free to use the real stuff!! (Mike turns into Captin Jack Sparrow and calls it "Why is the rum gone?")

I bet this would be good as one of those alcoholic 'soaked' cakes too. Where you make the cake, then soak or pour alcohol right over it. It's one of those don't eat and drive kinda things ;)
