Grilled Polenta with Puttanesca Sauce

- ½ C reduced fat ricotta shopping list
- ¼ tsp freshly ground black pepper shopping list
- 1 (18 oz) tube prepared polenta shopping list
- 2 oz diced pancetta shopping list
- 1 lb 90% lean ground beef shopping list
- 2 C of your favorite prepared Puttanesca sauce shopping list
- 1 (5 oz) pkg baby spinach shopping list
How to make it
- Preheat grill
- In a medium bowl.mix ricotta and pepper and set aside
- Slice Polenta into 8 even slices
- Lightly spray both sides with cooking spray
- Heat a large non-stick skillet on medium and add diced pancetta; cook and stir unti; crispy, about 2 minutes
- Transfer pancetta to a plate and set aside;
- drain any excess fat
- Add ground beef to skillet; cook and stir until cooked through about 5 or 6 minutes;drain any fat
- Stir in sauce and reduce heat to medium low
- While ground beef is cooking, grill polenta on each side for 4 to 5 minutes
- Divide spinach among 4 plates and top with two slices of polenta
- Pour an equal amount of sauce over polenta slices and top sauce with 2 Tbsp. ricotta
- Garnish with crispy pancetta and serve
