Ingredients
  • 1 kg baby octopus
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic crushed
  • 2 tbsp finely chopped cilantro --we call it coriander in Australia and eat tons of it straight from the garden.
  • 2 tbsp fresh squeezed lime juice
  • 2 tbsp Nam Pla ---Thai fish sauce (the smelly one !)
  • SWEET CHILLI DRESSING
  • 1 small red chilli ,finely chopped
  • 1/4 cup fresh lime juice .
  • 2 tbsp palm sugar --brown sugar will do .
  • 1 tbsp fish sauce .-Nam Pla again
  • 2 tbsp finely chopped cilantro
  • 1 tbsp commercial sweet chilli sauce from any Asian shop .

Directions
  1. Hopefully you were able to buy ready prepared octopus and so ypou don't need to wash ,clean ,head and gut the fish .Make sure the hard beak is removed from the body as well .
  2. In a non-metallic bowl ,combine oil ,garlic ,coriander ,fish sauce ,chilli and lime juice .Add the octopus and stir to combine
  3. Cover and refrigerate for at least 4 hours to incorporate the flavours .
  4. To make your sweet chilli dressing combine the other ingredients in a jar and shake well .
  5. Heat your grill to high .
  6. Remove the octopus and drain a little to avoid flare-ups .
  7. Drizzle your grill with a little olive oil ,then grill the octopus ,turning often and basting with reserved matinade to keep moist .
  8. Being youn small octopus ,they will cook in 3 to 4 minutes , any more and they will be over-cooked and tough .
  9. Serve straight away with the dressing and some more cilantro and slivers of red onion maybe .Wedges of limes as well is a good garnish
