Pissaladiere or Anchovy and Onion tart

- 3-4 onions ,thickly sliced shopping list
- extra virgin olive oil shopping list
- 1 quantity of best quality frozen puff pastry --to hard to make yourself and the frozen stuff is excellent . shopping list
- 16 anchovies ,halved lengthways shopping list
- 12 black kalamata olives ,stoned . shopping list
- fresh thyme leaves shopping list
How to make it
- Slowly cook the onion in 2 tbsp olive oil until very soft .
- Preheat your oven to very hot ,about 220 Cent or 450 -475 F ..
- Roll out the pastry to make a 30cm x 23cm rectangle (thats 12 ins x 8 ins ).
- Leaving a 1cm rim (half inch ) ,prick the pastry all over with a fork and add a thick layer of the cooked onion
- Arrange the anchovy strips in rows to form large diamond patterns
- Put an olive in the centre of each diamond and drizzle over a little olive oil.
- Sprinkle some fresh thyme leaves over all .
- Bake in the centre of the oven for about 20 mins until the crust is brown and crisp .
- Cut into squares while warm and pass around .
- Sensational aromas from a wood fired oven .I make this while we prepare pizzas and snack on this until the pizzas are ready .
