Ingredients

How to make it

  • Slowly cook the onion in 2 tbsp olive oil until very soft .
  • Preheat your oven to very hot ,about 220 Cent or 450 -475 F ..
  • Roll out the pastry to make a 30cm x 23cm rectangle (thats 12 ins x 8 ins ).
  • Leaving a 1cm rim (half inch ) ,prick the pastry all over with a fork and add a thick layer of the cooked onion
  • Arrange the anchovy strips in rows to form large diamond patterns
  • Put an olive in the centre of each diamond and drizzle over a little olive oil.
  • Sprinkle some fresh thyme leaves over all .
  • Bake in the centre of the oven for about 20 mins until the crust is brown and crisp .
  • Cut into squares while warm and pass around .
  • Sensational aromas from a wood fired oven .I make this while we prepare pizzas and snack on this until the pizzas are ready .
