Tilapia Ala Cheesy Enchilada Sauce Recipe

Ingredients

Tilapia fillets (I used 5)

1/2 cup chopped onion

1 7oz. can chopped green chiles (mild or hot)

1 small can enchilada sauce (I used hot, of course, but you can use mild or med if you prefer)

4 oz. cream cheese

Shredded cheddar or Mexican blend - as much as you like - I just shook it on, 1 1/2 cups if I had to guess

Directions

Place frozen fillets in single layer in appropriate size baking dish

In large frying pan, saute chopped onion till about translucent

Add chopped green chiles and enchilada sauce and bring to simmer

Add cream cheese and incorporate till smooth

Pour over tilapia fillets

Sprinkle shredded cheese on top

Bake at 375* for 30 minutes (if using fresh or unthawed fish, around 20 minutes)

I had it with/over black beans and rice, but hubby had his in corn tortillas with some of the rice.
