How to make it

  • Mix all ingredients in saucepan.
  • Bring to a boil.
  • Reduce heat to medium and simmer until reduced by about half. Sauce will thicken quite a lot as it cools.
  • Store in refrigerator.
  • To use:
  • Brush generously on burgers, steak or meat of your choice just before removing from grill.
  • Stir a few tablespoons into a cup of BBQ sauce to liven it up or mix some into mayo or any kind of mustard to create a different sauce.
  • Mix some into soft butter to make sweet Guiness butter spread for rolls & bread.
  • Use as a glaze on cake or brownies- just brush over top of cake while still warm.
  • Warm a spoonful or two and pour onto small plate, cover with a few tablespoons of good olive oil and use as bread dipping sauce-especially good with irish brown bread.

    I made this last night and used it on some salmon. I cut the recipe and made 1/3 of it. What is in the bowl is what was left of 1/3 after I glazed the salmon. This was very sweet at first then had a kick at the back of the throat. I think this would be best mixed into something, like bbq sauce. It was good on the salmon but I'm not certain what else I would use it on. One note: keep an eye on this when reducing down. This bubbles up very quickly! I had to reduce it on a near low.

    If you've never had a Guinness burger here's how to do it: Grill a nice big Hamburger and brush generously with the Guinness glaze before removing from the grill. Place on bun and immediately top with the following: a slice of sharp cheddar, two slices of crisp bacon, crispy onions(your own homemade or canned type like Durkee)a slice of red onion, tomato and lettuce. Serve with extra glaze.
