Almost Healthy Chocolate Cake Recipe

Ingredients

1/2 cup rolled oats

1 cup boiling water

1 and 1/4 cups raw sugar

2 beaten eggs

3 tbsp Dutch cocoa

125g butter

1 tbsp pure vanilla

1 cup self raising flour

60g dark high cocoa content chocolate

Directions

Prepare a cake tin 12 ins square ,with buttered baking paper to the base and sides .

Heat your oven to 170 Cent .

In a saucepan cook the oats in the boiling water for 5 mins

Add the butter and chocolate and melt through the oats and remove from the heat.

Then fold in the sugar ,vanilla and flour and stir thoroughly

When cooled slightly ,add the beaten eggs and fold through mixing well

Pour into the prepared cake tin and place in the pre-heated oven

Cook for 30 t0 40 minutes ,checking at 30 with a skewer .

Cool on a rack ,then dust with powdered icing sugar

Serve with a dollop of your best thick cream .

Feel healthy ?? Those oats are good for you !!! lol .

Tongue in cheek really --its not so healthy when I dust it with icing sugar ,after frosting it and then serve it with thick full cream ---aaahhh ,the waistline groans again !!
