How to make it

  • Prepare a cake tin 12 ins square ,with buttered baking paper to the base and sides .
  • Heat your oven to 170 Cent .
  • In a saucepan cook the oats in the boiling water for 5 mins
  • Add the butter and chocolate and melt through the oats and remove from the heat.
  • Then fold in the sugar ,vanilla and flour and stir thoroughly
  • When cooled slightly ,add the beaten eggs and fold through mixing well
  • Pour into the prepared cake tin and place in the pre-heated oven
  • Cook for 30 t0 40 minutes ,checking at 30 with a skewer .
  • Cool on a rack ,then dust with powdered icing sugar
  • Serve with a dollop of your best thick cream .
  • Feel healthy ?? Those oats are good for you !!! lol .

    If you substitute 1/4 of the flower for yacon powder which is a deliciously sweet superfoods found in health stores you can also minus 1/4 of the sugar as yacon is sweet. Does anyone know how you can substitute the 125 g of butter for coconut oil how much oil equals 125 g of butter? This recipe is great but I don't really allow for much butter or white flour ? Thanks

    Tongue in cheek really --its not so healthy when I dust it with icing sugar ,after frosting it and then serve it with thick full cream ---aaahhh ,the waistline groans again !!
