California Chicken Recipe

Ingredients
  • 4 boneless,skinless chicken breasts
  • 1 tsp olive oil
  • 1/2 tsp onion powder
  • 1 pinch salt
  • 1 pinc ground black pepper
  • 2 avocados,peeled,pitted and sliced
  • 1 (8oz) pkg. Monteray Jack cheese,cut in 10 slices
  • 2 or 3 tomatoes,cut in 8 slices

Directions
  1. Preheat oven to 350 degrees.
  2. Warm oil in skillet and add chicken ,sprinkled with onion powder. Cook 15 mins or till chicken is browned and just about done. Add salt and pepper to taste.
  3. Place chicken on cookie sheet and top each breast with 1 or 2 slices of tomato and 2 to 3 slices of cheese. Place chicken in oven for 10 to 15 mins,until cheese melts. Remove from oven,add 2 to 3 slices of avocado on top of each breast and serve immediately.
  4. I marinate the chicken for a couple of hours in lime,oil,garlic and cilantro before cooking.
  5. This is also great on a roll as a sandwich!
