Fresh Corn Quiche Recipe

Ingredients

3 large eggs

1/2 small onion coarsely chopped

1 tablespoon all purpose flour

1 tablespoon granulated sugar

1 teaspoon salt

1-1/3 cups half and half

3 tablespoons butter melted

2 cups fresh corn kernels

1 deep dish unbaked pie crust

Directions

Preheat oven to 375.

Combine first 5 ingredients in food processor and blend until onion is chopped.

Add half and half and butter then process just until blended.

Transfer to large bowl then mix in corn and pour into crust

Bake for 50 minutes then transfer to rack and cool slightly then serve warm.

This is a good recipe. However, I would pulse chop the onion and then add the other ingredients and turn to on for a minute. Also, if you don't have fresh corn you can use Del Monte's Summer Crisp corn.
