Chicken Breasts Temecula Recipe
Wonderful chicken breasts ,coated and browned with mornay sauce and put under the broiler. From a winery in Temecula,Ca. Hence the name.

Ingredients
  • 6 boneless,skinless chicken breast halves
  • flour
  • 1 c bread crumbs
  • 2 eggs,well beaten
  • 3 Tbs butter
  • 3 Tbs oil
  • 3 tomatoes,sliced
  • 2 avocados,peeled and sliced
  • mornay sauce
  • parmesan cheese,fresh grated
  • Mornay sauce:
  • 4 Tbs butter
  • 4 Tbs flour
  • 2 c milk,scalded
  • salt and white pepper
  • 2 egg yolks
  • 1/4 c cream
  • 1/2 c fesh parmesan cheese or blend of 1/4 c parmesan and 1/4 c swiss cheese

Directions
  1. Pound chicken lightly between 2 pieces of plastic wrap,then bread by dipping in flour,then egg,then in bread crumbs. Saute in butter and oil till brown on both sides. place on cookie sheet. Top with the tomato slices and mornay sauce and then sprinkle with fresh grated parmesan cheese. Brown lightly under the broiler. Top with avocado slices ,if desired.
  2. Mornay sauce: Melt butter in small saucepan;add flour. Mix well and add hot milk. Stir till thickened. Add salt and pepper to taste. Beat together egg yolks with cream. Add to white sauce mixture a little at a time and cook till well heated. Add cheeses a little at a time,stirring till smooth. Add salt and pepper to taste.

Hey, what winery, Pat? I'm right next door to Temecula and the wineries are about 5 miles away.
This looks good and of course caught my eye when I was browsing for a baked chicken breast recipe.
