How to make it

  • 1 Preheat oven to 350º. Spray an 8 inch square baking pan with vegetable cooking spray.
  • 2 In a blender or food processor fitted with the metal blade, combine prunes and water. Process until smooth.
  • 3 In a medium bowl, combine prune puree, cocoa powder, sugar, egg substitute, oil, and salt. Using a mixer set on low speed, beat mixture until smooth. Stir in flour until just combined. Do not over mix. Spread batter in pan.
  • 4 in the top of a double boiler set over simmering ( not boiling ) water, melt butterscotch chips,
  • stirring constantly. Immediately pour over batter. Using tines of a fork, swirl butterscotch into batter.
  • 5 Bake brownies until a toothpick inserted in the center comes out clean, about 15 to 20 minutes. Place pan on a wire rack and cool completely.
  • Short Cut:
  • Melt butterscotch chips in the microwave instead of a double boiler.
