How to make it

  • Cook the bacon until done, reserving the fat, and crumble the bacon and reserve.
  • Boil the potatoes in their skins until done. Cool, then peel the potatoes and slice into a bowl.
  • Cook the onion and celery in the fat until soft and transparent. Add sugar, flour, and dry mustard and mix well, then add broth and vinegar. Cook until it thickens (a bit — it won't be real thick).
  • Pour over potatoes, add crumbled bacon, and mix VERY gently. Salt and pepper to taste, and garnish with parsley. Serve at room temperature.

    there are about as many recipes for german potato salad as there are family - most families have their own recipes. this is certainly one of the cherished old ones with something added that could not be had in germany of old - the stalk celery (which i like also). it is a lovely recipe and it was fun 'finding' it again - its been ages since i ate it anywhere as people are so much into counting calories *sigh*

    I think this is the recipe we used to use.. and I lost it. Most I have looked at have way to much vinegar... lock your jaws. This looks about right to me.. Going to be trying next weekend.. Thanks

    My Grandmother made this same recipe, if I'm remembering correctly, she added a scant of celery seed. I'm not sure, I'll have to ask my sister.

    I plan on trying this recipe. A suggestion for an alternate on the broth, I use a bullion cube and put it in a cup with a little water and nuke it for about 30 seconds. This can be used a a subsitute to maggi which is used in many german dishes. I use a bullion in most of my german dishes
