How to make it

  • process 1 st 5 ingredients in a food processor until finely ground
  • press mixture into a greased aluminum foil lined 13 x 9 inch pan, allowing foil to extend over edges of pan
  • bake at 350 degrees f. for 20 minutes or until golden on wire rack............
  • heat sugar and 1/2 cup key lime juice over low heat, stirring until sugar dissolves.....
  • remove from heat and set aside..................
  • sprinkle gelatin over 2 tablspoons of key lime juice in a medium bowl, stir in gelatin mixture, let stand for 3- 5 minutes........
  • add hot mixture to gelatin mixture, stirring until gelatin dissolves.....
  • whisk in sweetened condensed milk. and 1 teaspoon key lime rind
  • place bowl in a larger bowl filled with ice,,,,,,,,,,,,,whisk mixture 10 minutes or until partially set
  • fold in whipped cream..
  • pour over prepared crust........
  • cover and chill for 8 hours........
  • use foil to lift out of pan
  • peel foil away and cut into squares....and garnish with key lime rind....
  • makes 24 squares.............
