Looking for something new to make to go with the rest of the meal, this was a delight to the senses, colorful , fragrant and easy to make it is a winner all around!

Ingredients
  • 1 small onion, chopped
  • 1 meduim carrot, chopped
  • 2 T butter
  • 1 cup quick cooking barley
  • 2 cups chicken or veg broth, divided
  • 1/2 pound aspapagus, trimmed, and cut into 1/2 inch pieces
  • 1/4 teaspoon dried majoram
  • 1/2 teaspoon parsley

Directions
  1. In large skillet sautee the carrot, onion, and asparagus in butter Stir in barley, stir for one minute Stir oin 1 cup broth, cook and stir 2 minutes.Cook simmering for 15-20 minutes until the barley is tender , stirring occasionally until all the broth is absorbed.
  2. Stir in margoram and pepper, sprinkle with parm cheese if desired.
