How to make it

  • In large skillet sautee the carrot, onion, and asparagus in butter Stir in barley, stir for one minute Stir oin 1 cup broth, cook and stir 2 minutes.Cook simmering for 15-20 minutes until the barley is tender , stirring occasionally until all the broth is absorbed.
  • Stir in margoram and pepper, sprinkle with parm cheese if desired.

    Delicious! My broth was absorbed after 15 minutes over a bit higher than medium heat. I used vegetable broth. A little bit more in IMI. 7/19/15
