How to make it

  • Scoop onion into small strainer and rinse under cold water. shake off excess water and trander to a large bowl,along with green chilies and tomatoes.
  • Cut around each avocado,from stem to blossom and back again.,then twist to seperate halves. Scoop out pit,discard. Scoop flesh from the skin and add to bowl. Usong a large spoon,mash the avocados into coarse puree,mixing in all the flavorings. Taste and season with salt and lime juice,usually 1 tsp. salt,lime juice is personal taste.
  • Cover with wrap directly on surface and refrigerate till readt to use. Sprinkle with a little chopped cilantro and queso fresco.

    BEST GUACAMOLE EVER!!! I increased the sun-dried tomatoes up to 1/3 cup. Also, I replaced the fresh peppers with one typical small 4 ounce can of diced mild green chilies (well drained). I think the canned peppers mush into the overall mix better because they are softer, so I assume that 4 ounces of canned jalapenos (diced and well drained again) can be substituted for a spicier mix if desired, but I think the milder mix with canned mild green chilies was perfect for the average palate when served to people with varying tastes. Also, use the full 2 Tbsp of lime juice (I actually used 2 Tbsp of lemon juice because I had no lime juice on hand), but either juice should be good when used at 2 Tbsp in this recipe, as you want enough to enhance the flavor, but not make the guacamole taste "sour". As far as salt is concerned, I started with 1/4 tsp, but ended up at 1/2 tsp (which may sound like a lot of salt for some people), but it was just enough to act as a flavor enhancer as intended, but without making the guacamole taste "salty"....I actually added a finger-pinch of MSG also. The dip would probably taste great with no salt (or MSG) added, but I never tried it that way.
