PORK CURRY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Staley Estate in Wills Point, Texas in 1982.

Ingredients
  • 2 tablespoons olive oil
  • 1 large white onion chopped
  • 1 tablespoon curry powder
  • 2 large fresh tomatoes chopped
  • 2 garlic cloves chopped
  • 2 tablespoons minced fresh gingerroot
  • 1 cup beef broth
  • 1 pound cooked pork cubes
  • 1 teaspoon hot red pepper flakes

Directions
  1. In deep heavy frying pan heat oil over medium high heat and cook onion 3 minutes.
  2. Add curry powder, tomatoes, garlic, ginger and red pepper flakes.
  3. Continue to cook stirring often for 10 minutes longer.
  4. Stir in broth scraping up browned bits from pan then bring to boil and add pork.
  5. Reduce heat to low and simmer gently for 15 minutes stirring often.
  6. Serve over hot brown rice.
